So we are officially "potty-training" now! Katelynn has been interested off and on with the potty business and today was the first day that she actually went potty on the potty chair (twice!). However as my excitement grew, she ended up with more accidents for the rest of the day. But at least we have started and we're now committed! Wish us luck ;~)


This afternoon we picked up Caleb's new glasses for reading at school. He impressed Mark and I both when he first got home with them, picking up one of his books and breezing right through it. This will definitely help with 1st grade which starts next week!



And I'll finish with a recap of a little conversation with Caleb at the dinner table tonight:
Caleb: Who is God? No, wait a minute, who is Jesus?

Mommy: Jesus is God's son.

Caleb: Are you kidding? Are you crazy? I thought Jesus was Noah's son! =)
As an FYI, I have decided to combine both this family blog and the new blog that I started last month called "a better you". I decided it was less of a hassle to just post everything on one blog site. So along with our family news I'll also be putting up posts and discussions on everything from bettering health, finding "greener" alternatives, and becoming more economical. Enjoy!

Tanganyika Wildlife Park trip

On Sunday, we ventured out with Papa and Grandma Hain to Wichita's newest zoo-Tanganyika Wildlife Park-where you can get a little more up close and personal with the animals. We had so much fun not only walking amongst the animals, but feeding them too!!

Happy Birthday Emmalie!

Yesterday, Tony and Shelia's daughter, Emmalie, celebrated her 5th birthday! We all attended a fun afternoon at the Y, and along with cake and ice cream we enjoyed jumping and running around in the gymnasium. The kids absolutely loved it!! Here are some pictures:

Meat: friend or foe?

Every two weeks I come up with a meal plan for dinners for our family of four. As of lately I have tried to become more and more resourceful when I plan out our meals.

For instance, when using ground beef you can add in "fillers" to stretch out the meat into at least two dishes that would normally call for a pound of meat each. These fillers include: cooked rice, uncooked oats, bran cereal, cracker crumbs, bread crumbs, and crushed croutons. Add in after you've browned the meat, and cook on low. Use one or many and you'll find that your family won't even know the difference.

This concept can be applied to other meats as well. One tip that I got, that I thought really helped us, was buying a whole chicken (usually no more than $5), and taking all of cooked meat (which will give you up to 5 cups of chicken) using it for several dishes and casseroles.

How about something we may overlook-meatless dishes. Before you get all "I'm not a vegetarian" on me, think about it. If we use meat on all of our nightly dishes, this can cost us up to $50 a week with just the meat alone. If you add just one meatless dish a week, you can save yourself some money and add important nutrients, including fiber!

Look at these:

Meatless Quesadillas: layer refried beans, black beans, shredded cheese and green onions on a flour tortilla. Place another tortilla on top and heat on a skillet. Filling and fast-can't get much better than that!

Vegetable Omelet: use a variety of seasonal vegetables like squash and zucchini paired with tomato and cheese on an omelet made from egg mixed with a tablespoon of water for a fluffy protein dish.

Stuffed Baked Potatoes: now this is a truly versatile dish-use steamed broccoli and cauliflower topped with cheese on a baked potato, or use vegetarian chili to top instead. You can get really creative with a baked potato and you won't have to give up flavor!

Pasta: Go Italian! Pasta is also a very versatile dish. Grilled vegetables such as red pepper, eggplant, onion, zucchini, squash, and tomatoes tossed in thin spaghetti makes a tasty alternative to traditional meaty sauce.

Just a few ideas to get you started. Feel free to share any other meatless recipes that you've tried or have heard of! A big advantage to not using meat is that it forces us to get creative and in most cases include more healthy options, like vegetables, to our dishes. Most Americans do not include enough vegetables in their diets. It's meatless dishes like these, that really help us get closer to our suggested daily servings.

Last night Papa Rowe and Great-Grandma Rowe took Caleb and Katelynn out to a fish-fry! A good friend of ours-Lyn-who was there, took these cute pictures of the kids:


Well you know what they say, when the kids are away the parents will play! Or at least that's how I remember it :)
Mark and I went out to dinner and a movie, then ended up at the Alley to play cosmic bowling. Keep in mind that I'm not a very good bowler but I somehow managed to break 100 last night and I was very proud!! Mark, of course, did wonderful-even when he was trying to be funny and making silly shots!


We had a really fun time! And thanks to Papa and Grandma Rowe for entertaining the kids for us!
