Just wanted to say a quick hello and give out some recipes I tried this week.
This one I found on Pinterest (imagine that), very simple, and a great after school snack. And a way for me to use up some left over cornflakes.
Peanut Butter Cornflakes
1 cup sugar
1 cup corn syrup
1 1/4 cup peanut butter (crunchy or creamy)
4 cups cornflakes
Bring sugar and corn syrup to a boil in a large saucepan and let it boil about 1 minute. Remove from heat and add peanut butter. Stir until smooth. Add the cornflakes. Drop onto wax paper in spoonfuls and let it set. Once cool store in airtight container.
I also made some granola to top my morning yogurt. I've had this recipe for a while that a friend had given me. I like to change it up to add new flavors. But it is very simple.
Granola:
3/4 cup brown sugar
1/3 cup oil
1/3 cup honey
5 cups oatmeal
1/2 cup raisins or craisins
1/2 cup instant dry milk
3/4 tsp cinnamon
pinch of salt
nuts, wheat germ, dried fruit, coconut (all optional)
In a large saucepan, combine brown sugar, oil, honey, and oatmeal. Heat until sugar is dissolved. Remove from heat. Add raisins, dry milk, cinnamon, salt, and any optional ingredients. Mix well. Spread on a lightly greased cookie sheet and bake at 375 degrees for 10 minutes. Let cool. Store in an airtight container.
I've been thinking about a lot of things lately.
I think the end of winter does that to me. Life, kids, family, work. All of it comes buzzing through my head at speeds I cannot control.
I've also been thinking a lot about this blog, what it means. Community, sharing our lives. I've had so many thoughts and ideas on how I want to think back to our every day moments. Our feelings, our motions. What I have had to decide is that I really have come to love this little corner of my mind. Looking back at older posts and having the ability to transport myself into the past a little. What we were doing, what are lives were then, how the kids are growing.
It's a gift that our own parents weren't able to experience. Not like we can today. Technology is a great and fearful thing. Some days I want to close shop. I want to put curtains over the windows. I want our world to ourselves.
Then after reflecting and many conversations with myself (no I haven't checked into a psych ward yet), I have found that the gift is within the everyday moments. It's when my 5 year old daughter sits down with me to learn to fold laundry (ah, finally!) or seeing my son get ready to play baseball. It's not in the grand productions. The big number. It's the day to day. And this blog represents that.
It is something that makes me happy. Something to share. We are all connected. I really do believe life's purpose is in that one statement. And I hope we all have that sense of community in our lives. We are still setting up our own here in our new surroundings. But it's coming.
So I post because I love to post. This blog brings a lot of smiles and memories that are our own. Thank you for reading. Thank you for taking the time out of your day to see what's going on in ours. I still think everyone should have a blog. A voice. We all have one, and we are all so very important. Like Katelynn said at the dinner table tonight, "our family, we do the right stuff." I think we all do the right stuff, by being present. Every day, in every way we are showing up.
